Roasted Bruschetta

Ingredients
- 2 heads of garlic
- 3 cups cherry tomatoes
- 12 sprays Olivia Kitchen Sprayer EVOO
- 1 tsp sea salt
- ½ cup chopped basil
- 1 baguette
Directions
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Separate garlic into cloves, crush with back of knife, remove peel. Halve any large cloves.
- Spread garlic and tomatoes on baking sheet. Spray with 4 sprays, toss, spray with 4 more. Sprinkle with salt.
- Roast 20-22 minutes until tomatoes are jammy and garlic is tender.
- Transfer to a bowl using the parchment corners. Add basil and stir.
- When ready to serve, preheat oven to 400°F. Slice baguette into ½ inch slices.
- Spray bread with 4 sprays of oil. Toast 5-7 minutes until golden.
- Top toasts with bruschetta and serve.
